PS: I had an assistant who lets say helped me (ok did quite a bit !) making this recipe! That was my hubby!
So, let us start.
Ingredients:
- For the Crust
- 280g butter
- 110g brown sugar
- 240g flour
- 1 tsp vanilla essence
- pinch of salt
- For the Filling
- 800 g strawberries
- 168 g brown sugar
- 4 lemons (juice only)
- 3 egg whites
- 1 egg
- 84 g flour
- pinch of Salt
- Some strawberry jam/syrup (optional)
- Preheat oven to around 170 degrees Celsius.
- Line a square tin pan with parchment paper so that the bars are easily removed from the pan.
- For the crust, just mix the butter and sugar together with an electric mixer and then add the vanilla.
- Add the flour until just incorporated.
- Place the dough into the baking pan and spread it evenly so that it covers the bottom of the dish.
- Bake for around 30 minutes until the dough becomes slightly golden.
- For the filling blend the strawberries in an electric blender to juice them and then transfer them to a large bowl. Do not forget to was the strawberries beforehand and to remove the core and the green stem.
- Add the sugar, the eggs, lemon juice, flour and the pinch of salt to the bowl and stir to combine.
- Pour the mixture onto the crust and bake for 25-30 minutes. Do not worry the mixture is very loose at this point but it will thicken eventually.
- Let cool to room temperature and refrigerate for around 4 hrs before serving. Do not forget to cut them into bars or squares to serve!
TIP : You can add some chocolate syrup or some strawberry jam on the crust just before adding the Strawberries for some added flavour!
